Welcome to my first Super Bowl Recipe! I’m kinda surprised I didn’t do one last year. And I honestly can’t figure out why I didn’t. Because as long as I’ve been around, the Super Bowl or the “Big Game” has always been a big deal. There has always been a fuss made in our household for the event. Especially as I entered my 20’s. An absolute day of gluttony that was filled with fun commercials, yelling at the tv and of course tons of food. This year however, things are a bit different. Thanks to several factors, we are going healthy this year. And honestly, I welcome the challenge! It’s going to be a lot of veggies and items lower in fat. So if you are looking for good old fashioned wings and cheesy goodness, this isn’t the post for you. But come back soon, cause I’m sure both of those things will show up on here at some point.
I’ve mentioned my Dad on here several times and in quite a few posts. Super Bowl to us was like a Holiday. It really started in my early 20’s as most times it was just him, my Mother and I. I’m not sure what was the catalyst to really get things going but each year, Dad and I would brainstorm on what treats we were going to make. We rarely did the same thing each year and never ordered out. Our goodies ranged from several sauced wings, to fondue, to gumbo, to chicken cheesesteaks and everything in between. Two things that did remain every year was that we always made too much food and Mom always made a veggie tray. Honestly, we probably could have fed 20 people and it was usually just the three of us. And Mom was always the only one to eat veggies but she still did it and we always made fun of her for it.
The past few years Mom has gone with her friends or my brothers and I have hung with our little group of friends. Lots of food was still made. However, this year, the majority of our group is trying to either lose weight. Each of us have our own methods and our own goals but none of us wanted to deter our progress for one game. Therefore, the discussion arrived at doing a “healthy Super Bowl”. This recipe had been floating around in my head for a minute so it made complete sense that it would come into play. But I didn’t want to do traditionally tortilla chips. I wanted something else.
I’ve mentioned in other posts how healthy Sweet Potatoes are for you. They have so many wonderful benefits for everyone. It was then and there that sweet potatoes would be our chips.
So let’s get started with your Tzakiki sauce. I always make my sauces first that are going to be chilled because then they can build more flavor. If you are following WW, this sauce is 0 points if you use non fat plain Greek yogurt, which I am. Into the bowl goes 1 cup of that, chopped dill, minced cucumber, lemon juice, red wine vinegar, salt and pepper.
Mix that up and get it in the fridge.
Next, grab your sweet potatoes and clean the outside well. You can peel them if you like but I didn’t. The skins actually have a good amount of nutrients. If you have a mandolin, you can slice them on there. I did mine by hand because I wanted them thin enough to cook nicely but thick enough that they can support the ingredients that are going to be put on them. So slice them 1/8th of an inch thick. Give them a quick spray of oil and air fry them at 400 degrees.
In a large skillet, cook your ground turkey, seasoning it with Za’atar spice. Brown nicely and then hold warm.
Dice your cucumbers, tomatoes and red onions. Once your sweet potato chips are browned and finished, it’s time to assemble.
Lay your sweet potato chips down, place some tzakiki sauce down as “adhesive”. Sprinkle your ground turkey meat down, followed by your cucumbers, tomatoes and red onions.
Drizzle some more tzakiki sauce on top, sprinkle feta cheese and some dill and that’s it! You’re ready to go and enjoy the Big Game!
We’re going to have a Buffalo Cauliflower as well and believe it or not, for the first time ever, I will be making a veggie tray. Mom is very happy.
Game Day Greek Nachos with Air Fried Sweet Potato Chips
Serves 4
- 1 cup nonfat plain Greek Yogurt
- 2 Tbsp lemon juice
- 1 1/2 Tbsp Red Wine Vinegar
- 2 Tbsp Fresh Dill, chopped plus more for garnish
- 3/4 cup small diced cucumber
- Salt & Pepper to taste
- 2 large sweet potatoes, scrubbed and dried
- 1 pound 99% fat free Ground Turkey
- 3 Tbsp Za’atar seasoning
- 2 medium tomatoes, seeded and diced
- 1/2 cup red onion, small diced
- 1/2 cup reduced fat feta cheese
In a small bowl, combine yogurt, lemon juice, red wine vinegar, dill, 2 tablespoons of cucumber, salt and pepper. Stir to combine and refrigerate until ready to use.
Preheat air fryer to 400 degrees. Slice sweet potatoes 1/8th inch thick. Spray lightly with oil and air fry for 15-18 minutes or until slightly brown and soft to touch. Keep warm.
In a large skillet, add 1/2 tablespoon oil and cook ground turkey, crumbling while cooking. Season with Za’atar seasoning and cook until slightly browned. Keep warm.
To assemble, lay sweet potato chips on platter. Drizzle a little bit of tzakiki sauce on chips. Then top with ground turkey, tomatoes, cucumber and red onion. Drizzle more tzakiki on top. Then sprinkle with feta cheese and a few more sprigs of dill for garnish. Serve immediately.
