I’m kicking off a new collection here on the blog called “Super Quick Summer Hits”! These will include some great recipes but not a lot of back story. A small note here or there, but that’s it. Who wants to be stuck inside reading a whole long story when they can be out enjoying the summer weather? Whether it’s grilling, making cool cocktails, or chilling out with some cool treats, it’s more recipe for you with less jabbing.
The first one we are kicking off with is a Mojito Watermelon Salad. This recipe was inspired by one that I had in our recent trip to Asheville, North Carolina. I personally am having a big Watermelon Moment this summer. What does that mean? I’m down for all things watermelon. Got me some watermelon skincare recently, might have a watermelon cocktail in the works in the future and mostly, fell in love with this super simple, super tasty summer salad.
You only need 4 ingredients: Fresh Watermelon Cubes, Blueberries, Fresh Mint and Fresh Lime Juice. That’s it!
So without further ado, here it is!
Super Quick Summer Time Hits: Mojito Watermelon Salad
Serves 8
- 2 quarts Watermelon Cubes, pre cut from grocery store or cubed from a whole melon
- 1 pint Fresh Blueberries, washed and dried
- Juice from 4 Limes
- 1 bunch Fresh Mint, washed, dried and leaves sliced
Place watermelon cubes and blueberries in a large bowl. Sprinkle mint in and lime juice. Toss to combine. Refrigerate for at least 1 hour. Serve chilled.
