My better half is a HUGE Baklava fan. It’s one of his “if it’s an option, I have to have it” desserts along with Cannoli, Ghirardelli Chocolate Milkshakes and almost anything with authentic Maple. So of course when Greece came along, there was no other dessert option to do then Baklava. But leave it to me to not want to do the traditional recipe. Of course it’s delicious and relatively easy, yet sticky, to make. But why not switch it up and add something a little creamy to it???

For not being a sweet tooth, I do enjoy me some ice cream. Not all the time, but sometimes. To me, Baklava is too sweet. Believe it or not, the ice cream cuts the sweetness a bit and adds the creaminess that I personally enjoy. So what could I do to develop something that would put a bit of vanilla goodness into it?

A sundae? No. A cobbler? Nah. Maybe I watched too many baking shows but all I could think of was the silicone molds they use on there. What could I do that could give me an excuse to buy and use those? And that’s when the bombs came in.

This dessert is actually deceivingly easy. All you need for the bombs is a vanilla ice cream, some chopped walnuts and pistachios and cinnamon. Oh yeah, and some time. The best thing about these molds (and no this isn’t sponsored) is that you don’t have to spray them or line them with anything. You don’t necessarily need these either. They are available on Amazon or any other kitchen supply store. The ones used for this recipe were the 2 1/2 inches, 6 set molds. You can use an ice cream scoop, roll these into balls and freeze them as is.

Make sure these are frozen for at least 4 hours before you start manipulating the the bombs. Bake your phyllo dough off in the process, brushing it off with butter. Cool it completely before crumbling it, having it ready to roll.

These are great little dinner party desserts, perfect for getting the kids involved in helping or just a simple little portion controlled treat. My better half was quite happy with these. I may have eaten a few myself. I hope you enjoy these!

Baklava Ice Cream Bombs

Serves 6

  • 1 cup Salted Pistachios, crushed and divided
  • 3/4 cup Walnuts, shelled, rough chopped and divided
  • 1 tsp ground Cinnamon
  • 3 cups Vanilla Ice Cream
  • 1 cup Honey
  • 2 sheets of Frozen Phyllo Dough, thawed
  • 1/2 cup Butter, melted

Combine 1/2 cup of pistachios and 1/2 of the walnuts in a small bowl and toss with cinnamon. Set aside.

If using a traditional ice cream scoop, line a sheet tray with parchment paper and set aside.

Take 1/2 cup vanilla ice cream and press into mold or scoop into a ball. Gentle push a bit of the nut mixture into the ice cream. If using molds, put half of the ice cream in first, then the nuts, then more ice cream.

Take a spatula and smooth out the tops of the molds then place a layer of plastic wrap over it and freeze. If using ice cream scoop, place scoops on sheet tray and freeze. Freeze for a minimum of 4 hours before construction.

Lay out phyllo dough on a parchment paper lined sheet tray. Brush with melted butter. Follow baking instructions on phyllo dough and allow to cool.

For assembly, crush phyllo dough into flakes. Taking each bomb individually, begin with drizzling one teaspoon of honey onto ice cream. Roll ice cream through phyllo dough flakes and set aside. Sprinkle a teaspoon of remaining nut mixture on top of finished bomb. Drizzle another teaspoon of honey on top of bomb and serve.
